Sweet potatoes are packed with vitamins and nutrients. No matter how good they taste, some picky eaters still won’t eat them on their own. So, this week, I’ve mixed them with bananas and peanut butter to make a muffin - and what kid says no to muffins?
Your ingredients are simple
Smash the sweet potato and banana together
Add the peanut butter, eggs, cinnamon, vanilla and mix well
The directions are even more so
Stir in any additions you may want and spoon into greased muffin tins- I used mini muffins for greater child appeal
Prep time: 10 minutes
Baking Time: 30 minutes
½ cup of cooked mashed sweet potatoes (approximately 1 medium, or 2 small sweet potatoes)
½ cup mashed bananas (approximately 1 banana)
1 heaping tbs of peanut butter
Cinnamon to taste
Vanilla extract to taste
Optional add-ins: honey, flax seeds, chia seeds, chocolate chips

Step 3: Stir in any additions you may want and spoon into greased muffin tins- I used mini muffins for greater child appeal
Step 4: Bake at 200°C for 30 minutes, or until a fork or a knife comes out clean.
After the muffins came out, I felt like they needed more sweetness. This is probably because the peanut butter creates a little bit of bitterness upon cooking. Next time, I would add a ¼ cup of honey to balance out the flavors. Alternately, use a riper banana to create that desired sweetness.
