Mimi's Vegan Kitchen: Watermelon & Passion fruit Granitas

Fact: I can’t get through a couple of potatoes but I can easily eat a watermelon for breakfast. Oh, I meant pre-breakfast!

 

Our household goes through watermelons almost as fast as water in the summer! We eat them whole, blend or juice them and now I’m experimenting with granitas and sorbets... I picked up the watermelon and passion fruit combo from instagram a few years back and since then I’ve been hooked!

 

Those granitas are great to share, especially in the outdoors during those hot summer nights. They’re very easy to make so do let us know if you try them!

 

Prep time: 20-30 minutes

Total time: 6-7 hours

Serves: 3-4

 

Ingredients

  • ¼ of a watermelon

  • 2 passion fruits (optional)

  • 1 tbsp of honey or maple syrup (or to taste)

  • ½ cup of filtered water

 

Directions

Step 1: Cube and deseed the watermelon and place it on a freezer-safe tray and freeze for 3-4 hours.*

Step 2: Process the frozen watermelon, adding water whenever necessary until it becomes smooth.

Step 3: Cut the two passion fruits and empty them into the mixture and pulse for a few times (optional).

Step 4: Taste your granita and add a sweetener if needed.

Step 5: Transfer the mixture into a freezer-safe container and freeze for another 3-4 hours.

Step 6: Serve with more passion fruit or lemon shavings.

 

* If you freeze the watermelon cubes overnight, when processed it’ll probably make a sorbet instead of granita.
