Mimi's Vegan Kitchen: Classic Avocado Pesto

I’ve always loved pesto; the classic basil pesto that is! My mom has been making avocado pesto for us for a couple of years. I believe the got the recipe somewhere on pinterest. She never saved it though but it’s pretty basic so I found it easy to put these ingredients together and tadaa. I don’t know anyone who doesn’t like this. My non-vegan friends love this and always ask for it! It also can be done raw if you don’t roast the pine nuts. Try this on pasta, pizza, toast or as a dip!

 

Prep time: 5 minutes

Cook time: 2-3 minutes

Serves: 1-2


Ingredients

  • 1 ripe avocado

  • 1 bag of sweet Italian basil or a handful

  • 1 clove of garlic

  • 1 lemon or lime

  • 2 tbsp of pine nuts

  • Salt and pepper to taste

Directions

Step 1: Roast the pine nuts for a few minutes over low heat.

Step 2: Peel your avocado and place it in a food processor along with the basil, garlic, limejuice, roasted pine nuts and salt and pepper and pulse until a thick green paste forms. You can alternatively place everything in a blender but the mixture would need some water or oil to get going.*

Step 3: Serve over pasta, pizza, toast or use as a dip!

 

*Avocadoes and water don’t mix very well. I prefer using water rather than oil though! It just tends to separate if I leave it out for long.
