The Hidden Healthy: Spinach Pesto Pasta!

Spinach gave Popeye muscles for a good reason. I was going to start by listing all the nutrients it contains, but the list is endless and is contains pretty much everything good for you! This week I made an adult and kid friendly dinner dish.

You should remove the stems from the spinach leaves. Perhaps your child can help with this step!

For adults, and if your kids don’t mind the spinach, then you can leave the spinach in strips and mix with the pasta and pesto.

If your kids are extra picky, you can blend the cooked spinach and mix with the pesto.

Prep time: 20 minutes

Cooking Time: 15 minutes


  • Pasta

  • ¾ cup pesto sauce

  • 1 packed cup Fresh spinach- (frozen spinach can be an alternative too)

  • Lemon zest, lemon juice of 1 lime/lemon

  • Salt and pepper


Step 1: Boil the pasta as per the package instructions or slightly under, because you will cook twice.

Step 2: I had homemade pesto sauce in the freezer, you can make your own for this step but jarred pesto is a good alternative.

Step 3: Remove the stems from the spinach and cut into thin strips. The spinach cooks very fast and shrinks in size drastically, so don’t make your strips too thin.

Step 4: Place the spinach in a pan with a heaping teaspoon of pesto sauce, and season with salt and pepper.

Step 5: Place the pasta in the large pan with the spinach and pesto mixture, and cook for 1 minute approximately.

I made my pasta with shrimps, but you can add chicken or simply make a tasty pasta dish on its own!
