The Hidden Healthy: Pea Pesto


As a busy mom, sometimes you need a stock of something in your freezer that’s very versatile and works as a sauce for pasta, a dip for veggies, or a topping for proteins. Actually, sometimes is an understatement- more like all the time. This super quick and easy pesto is healthy, extremely bright and yet another way to incorporate vegetables into your kids’ meals.

Prep time: 6 minutes

Ingredients

  • 1 cup peas (fresh or frozen)

  • 1-2 cloves of garlic (depending on your liking)

  • Olive oil

  • Optional: add basil or arugula for additional flavor

Directions:

Step 1: Wash and place the peas into a blender

Step 2: Depending on how much garlic you enjoy, add 1 to 2 cloves

Step 3: Add salt and pepper to taste

Step 4: Blend the mixture and slowly add in olive oil until the mixture is well combined.

Step 5: Feel free to add a tablespoon of water to the mixture to smooth things out further.

Pesto freezes very well, and can be taken out of the freezer to be placed on top of pastas, added to chicken or fish, or even used as dips for carrots and cucumbers. Enjoy!
