The Hidden Healthy: Orzo Soup with Veggies


Since Ramadan is all about food, and soup is at the center of every table, this week’s recipe is a healthy version of the traditional orzo soup that tastes great for adults and children. The addition of vegetables to the soup adds both flavor and nutrients to an easy, traditional dish. Better yet, the veggies can be hidden underneath the orzo to feed those picky toddlers the vegetables they need. Feel free to add small pieces of chicken for a well-rounded meal!

Prep time: 40 minutes

Ingredients

  • 2 cups of orzo

  • Chicken stock

  • 2 carrots

  • 2 Zucchinis

  • Salt and pepper to taste

Directions

Step 1: Chop up the vegetables into small cubes

Step 2: Sauté the orzo in 1 tablespoon of oil until golden brown

Step 3: Add in the vegetables

Step 4: Add the chicken stock and feel free to add more water to achieve your desired consistency

Step 5: Add salt and pepper to taste (sometimes I like to add a touch of cooking cream to add a bit more flavor)

Step 6: Allow the orzo and vegetables to cook until tender
