Mimi's Vegan Kitchen: Mango Kale Smoothie

Or should I call this immune boosting smoothie?

I have never walked into a juice bar without spotting this combination on the menu. And… it’s famous for a reason! Mangoes are loaded with vitamin C and kale is a good source of protein, calcium, magnesium and a variety of vitamins. Fresh ginger root, the third ingredient, is a powerful medicinal spice and has been used for the prevention and healing of many common illnesses for centuries!* You can read more about Kale's many benefits here.

When I first thought about typing up this recipe, I backed off quickly, thinking about how it's not mango season. Until I found out that it's not just my family who freeze mangoes in the summer to use in the winter but many Egyptians, and Indians (who would've thought?), do this!

So cheers for all the mamas who freeze mangoes so we can enjoy some tropical-ness in the colder season!

Prep time: 5 minutes


  • 1 cup of frozen mangoes**

  • 1 cup of chopped Tuscan kale (you can substitute with spinach)***

  • Ginger root (I use a chunk that’s slightly bigger than a table spoon)


Put frozen mangoes in the blender and top with ¼ glass of water. Place the kale and ginger on top. Blend until smooth and serve! If this is too heavy for your blender than add another ¼ glass of water. You can also try it before serving and if it’s not sweet enough for you, feel free to add a natural sweetener, such as maple, agave or date syrup. Alternatively, go with my favorite option, one slice of fresh ripe pineapple.

** If you’re using fresh mangoes then make sure it’s ripe and sweet and use one mango. You might need to use some ice to thicken it up a bit.

*** I use exactly a 100 gm bag of local Tuscan kale. I personally like the earthy taste of kale but feel free to use less if the taste is overpowering.
